Method

  1. Heat the olive oil in a large Dutch oven over medium heat. Add the onion and 1/2 tsp of the salt. Cook, stirring now and then, until soft and turning golden at the edges, 6–8 minutes.

  2. Add the garlic and ginger and stir for 1 minute until fragrant. Add the tomato paste, cumin, coriander, cinnamon, turmeric and red pepper flakes. Stir constantly for 1–2 minutes, until the paste turns brick red and starts to stick to the bottom of the pot.

  3. Add the sweet potato and stir to coat it in the spices. Add the rinsed lentils, diced tomatoes and broth, then scrape up any browned bits from the bottom of the pot.

  4. Bring to a boil, then lower the heat and simmer, partly covered. Stir every 5 minutes so the lentils don't stick. Cook until the lentils have broken down and the sweet potato is tender when pierced with a fork but still holds its shape, 20–25 minutes.

  5. Stir in the chickpeas, raisins and the remaining 3/4 tsp salt. If the stew has gotten thicker than you'd like, add water 1/4 cup at a time. Simmer 3 minutes, until the chickpeas are heated through and the raisins have plumped.

  6. Stir in the kale a handful at a time and cook until it wilts and turns bright green, 2–3 minutes.

  7. Take the pot off the heat. Stir in the lemon juice and black pepper, then taste and add more salt or lemon if needed. Serve in bowls, on its own or over couscous, with herbs and toasted almonds on top.

Storage: Let the stew cool, then refrigerate it in an airtight container for up to 4 days. You can also freeze it for up to 3 months, though the kale will be softer after thawing. Reheat on the stove over medium heat with a splash of water or broth until it's steaming hot all the way through.
