Method
Put the rinsed lentils and water in a medium saucepan and bring to a boil. Lower the heat and simmer uncovered for 20–25 minutes, until the lentils are tender but still hold their shape. Drain off any extra water.
While the lentils cook, make the slaw. In a large bowl, whisk the vinegar, olive oil, Dijon, maple syrup and salt. Add the cabbage, apple and green onions, toss well and refrigerate until serving.
Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook, stirring now and then, until soft and the onion is turning golden at the edges, 7–8 minutes. Stir in the garlic and cook for 30 seconds, until fragrant.
Add the tomato paste, smoked paprika, chili powder and cumin. Stir constantly for 1–2 minutes, until the paste turns a shade darker and starts to stick to the pan.
Pour in the apple cider and scrape up any browned bits. Simmer briskly until the liquid has reduced by about half and looks syrupy, 5–6 minutes.
Stir in the crushed tomatoes, soy sauce, vinegar, Dijon, maple syrup, salt and pepper, then add the cooked lentils. Simmer, stirring often, until thick enough that a spoon dragged through leaves a trail that fills in slowly, 8–10 minutes. Mash about a quarter of the lentils against the side of the pan to help it hold together. Taste and add more salt or vinegar if needed.
Toast the bread or buns. Pile the hot lentil filling on top, add a heap of apple slaw and pickles if you like, and serve right away.
Storage: Store the lentil filling in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months. Reheat on the stove with a splash of water. The slaw is best the day it's made but keeps for 1 day in the fridge. Store it separately and toast the bread just before serving.
