Method

  1. Cover the cashews with very hot water and soak for 15 minutes to soften while you prep the vegetables. Drain and rinse.

  2. Heat the olive oil in a large pot over medium heat. Add the onion and a pinch of the salt and cook, stirring now and then, until soft and translucent with a few golden edges, 6–7 minutes.

  3. Add the jalapeños and garlic and cook until fragrant and the jalapeños soften, about 2 minutes. Stir in the cumin, coriander and oregano and toast for 30 seconds, stirring so the spices don't scorch.

  4. Meanwhile, blend the soaked cashews, 1 can of cannellini beans and 1 cup of broth on high until completely smooth with no grit when rubbed between your fingers, 1–2 minutes.

  5. Add the green chiles, the remaining 2 cans of beans, 2 cups of broth, the salt and the pepper to the pot. Bring to a boil, then lower the heat and simmer uncovered for 10 minutes. Mash about a quarter of the beans against the side of the pot to help thicken it.

  6. Stir in the cashew mixture and the corn. Simmer gently, stirring often so the bottom doesn't catch, until the chili is thick and creamy and the corn is hot, 6–8 minutes. Add a splash of broth if it gets too thick.

  7. Take the pot off the heat and stir in the lime juice and cilantro. Taste and add more salt or lime if needed. Serve topped with avocado, green onions, tortilla strips and lime wedges, if you like.

Storage: Cool the chili, then refrigerate it in an airtight container for up to 4 days. You can also freeze it for up to 3 months, but add the cilantro fresh when you reheat. Reheat gently on the stove and add a splash of broth to loosen it.
