Method
Grate the carrot on the fine side of a box grater. Fine shreds soften overnight, while coarse ones stay crunchy.
Combine the oats, carrot, chia, cinnamon, nutmeg and raisins in a jar.
Stir in the almond milk and maple syrup, seal and refrigerate at least 6 hours.
Top with chopped walnuts just before eating so they stay crisp.
