Method

  1. Heat the oven to 375°F (190°C) and lightly grease an 8x8-inch baking dish with coconut oil. In a small bowl, stir the ground flaxseed and water together and set aside until thick and gel-like, about 5 minutes.

  2. In a large bowl, whisk together the oats, baking powder, ground ginger, cinnamon and salt.

  3. In a second bowl, whisk the almond milk, maple syrup, melted coconut oil, grated fresh ginger, vanilla, lemon zest and the thickened flax mixture until smooth. If the coconut oil clumps in the cold milk, warm the milk briefly first.

  4. Pour the wet mixture over the oats and stir to combine. Fold in the diced pear and about three-quarters of the raspberries.

  5. Spread the mixture evenly in the dish. Lay the pear slices across the top, dot with the remaining raspberries, then scatter the sliced almonds and the coconut sugar (if using) over everything.

  6. Bake until the center is set and no longer wet when pressed, the edges are bubbling and the almonds are golden, 35–40 minutes. If the almonds are browning too fast, lay a sheet of foil loosely over the dish for the last 10 minutes.
