Method
Heat the oven to 350°F. Line an 8x8-inch pan with parchment so it hangs over two sides as handles. Set out the cream cheese, yogurt and eggs to lose their chill while you make the crust.
Pulse the oats, pecans, 1/2 tsp cinnamon and a pinch of salt in a food processor until they look like coarse sand with a few small nut pieces. Add the melted butter and 2 tbsp maple syrup, then pulse until the mixture clumps when you pinch it.
Press the crumbs firmly and evenly into the pan with the bottom of a measuring cup. Bake until fragrant and golden at the edges, 10–12 minutes. Lower the oven to 325°F and let the crust cool slightly.
While the crust bakes, beat the softened cream cheese on medium speed until completely smooth and lump-free, about 1 minute. Add the Greek yogurt, pumpkin, 1/3 cup maple syrup, cornstarch, vanilla, spices and 1/4 tsp salt. Beat on low just until smooth, scraping down the bowl.
Add the eggs one at a time on low speed, mixing only until each one disappears. Overbeating adds air, which causes cracks.
Pour the filling over the warm crust and smooth the top. Tap the pan on the counter a few times to pop any bubbles. Scatter the chopped pecans over the top if you're using them.
Bake at 325°F for 35–40 minutes. It's ready when the edges are set and slightly puffed and the center wobbles a little, like set gelatin, when you nudge the pan. The top should not brown.
Turn off the oven and crack the door open. Leave the bars inside for 15 minutes, then cool them on a rack to room temperature, about 1 hour. Cover and refrigerate for at least 4 hours or overnight until firm.
Lift the bars out using the parchment. Cut into 16 squares with a sharp knife, wiping the blade clean between cuts. Serve cold.
