Tips
- Squeezing the zucchini is the step that matters most. Wet zucchini gives you soggy fritters that fall apart.

Method
Toss the grated zucchini with 1/2 tsp salt in a colander set over a bowl. Let it sit for 10 minutes to release liquid.
Meanwhile, make the dip: stir the coconut yogurt, 2 tbsp cilantro, 1 tbsp lime juice, the garlic and a pinch of salt together. Refrigerate until serving.
Pile the zucchini into a clean kitchen towel or cheesecloth. Wring it out firmly over the sink until it stops dripping. You should lose about 1/2 cup of liquid, and the zucchini should look fairly dry.
In a large bowl, whisk together the chickpea flour, baking powder, cumin, 1/4 tsp salt and the pepper. Add the squeezed zucchini, corn, jalapeño, green onions, cilantro and 1 tbsp lime juice. Stir until you have a thick, scoopable batter that holds its shape. The zucchini's leftover moisture usually hydrates the flour. If dry flour is still visible after 1 minute of mixing, add water 1 tbsp at a time.
Heat about 2 tbsp oil in a large skillet over medium heat until it shimmers and a drop of batter sizzles right away. Scoop in heaping 3-tablespoon mounds, leaving space between them. Flatten each one to about 1/2 inch thick.
Fry without moving them until the undersides are deep golden and the edges look set, 3–4 minutes. Flip and cook the other side until golden and firm when pressed in the center, 3–4 minutes more. Chickpea flour tastes raw if undercooked, so turn the heat down a little if they brown before the centers firm up.
Move the cooked fritters to a wire rack and sprinkle them lightly with salt. Keep them warm in a 200°F oven. Add more oil as needed and cook the remaining batter the same way.
Serve hot with the cilantro-lime dip and lime wedges.
