Blueberry Chia Overnight Oats is a vegan breakfast recipe made with rolled oats, chia seeds, soy milk. It takes 5 minutes of hands-on time, plus 6 hours resting, serves 1, and each serving has 370 calories, 13 g of protein and 10 g of fiber.
This is the base recipe for our overnight oats family. The ratio of oats, chia and milk gives a thick, spoonable texture by morning. Once you know it, every variation is easy.

Tips
- Stir again after 10 minutes if you can. It stops the chia from settling into a clump.
- Frozen blueberries release juice overnight and turn the oats purple. That's fine!

Method
Add the oats, chia seeds and salt to a jar and stir to combine.
Pour in the soy milk, maple syrup and vanilla. Stir well, scraping the bottom so no chia clumps remain.
Fold in half the blueberries, seal and refrigerate at least 6 hours or overnight.
In the morning, stir, loosen with a splash of milk if it's too thick, and top with the remaining blueberries.
Storage: Keeps 4 days sealed in the fridge; add fresh fruit on the day.
