5-Ingredient Silken Tofu Vegan Chocolate Mousse with Pomegranate is a vegan dessert recipe made with silken tofu, vegan dark chocolate (about 70% cacao), unsweetened cocoa powder. It takes 13 minutes of hands-on time, plus 2 hours resting, serves 4, and each serving has 270 calories, 9 g of protein and 4 g of fiber.
Silken tofu gives this mousse its body and most of its protein, while melted dark chocolate firms up as it chills to turn a pourable blend into a spoonable set. A little cocoa powder deepens the flavour and covers any trace of soy. Bring the tofu to room temperature before blending so the warm chocolate mixes in smoothly instead of seizing into flecks. Pomegranate seeds and flaky salt go on at the end for tart crunch against the rich base.
Ingredients
Mousse
- 12 oz340 gsilken tofu, drained and at room temperature, one standard shelf-stable or refrigerated pack
- 4 oz113 gvegan dark chocolate (about 70% cacao), chopped, check the label for milk solids
- 2 tbsp11 gunsweetened cocoa powder
- 3 tbsp60 gmaple syrup, add up to 1 tbsp more to taste
- 1 tsp4.2 gvanilla extract
To finish
- ⅓ cup57 gpomegranate seeds (optional)
- 1 pinch0.4 gflaky sea salt (optional)
Kit: blender or food processor, heatproof bowl, small saucepan, 4 small glasses or ramekins
Tips
- Cold tofu can make warm melted chocolate harden into tiny flecks. If the mousse looks grainy, keep blending for another minute; the friction usually smooths it out.
- Use a chocolate bar rather than chips where you can. Chips often contain stabilisers that melt less smoothly.
- A higher cacao percentage gives a firmer, more bitter mousse. At 85% or above, plan on the extra tablespoon of maple syrup.
- Pat the pomegranate seeds dry before topping so their juice does not pool on the surface.
Swap ideas
- Agave instead of maple syrup
- A more neutral sweetness that lets the chocolate stand out; use the same amount.
- Raspberries instead of pomegranate seeds
- Softer and juicier, with a similar tartness but no crunch.
- Add 1 tsp instant coffee dissolved in 1 tsp hot water
- Deepens the chocolate flavour without making the mousse taste of coffee.
- Firm silken tofu instead of soft silken
- A slightly denser mousse that sets a little faster; do not use regular block firm tofu, which blends grainy.

Method
Take the silken tofu out of the fridge about 30 minutes ahead if it is chilled. Tip it out of the pack, pour off the liquid and let it sit on a double layer of paper towel for 5 minutes to shed surface water. Do not press it.
Melt the chopped dark chocolate in a heatproof bowl set over a pan of barely simmering water, stirring until smooth, 2–3 minutes. Or microwave it in 20-second bursts, stirring between each. Let it cool for 3–4 minutes until warm rather than hot to the touch.
Put the tofu, cocoa powder, maple syrup and vanilla in a blender or food processor and blend until completely smooth, about 1 minute, scraping down the sides once.
With the motor running, pour in the melted chocolate and blend for 30–45 seconds, until the mixture is glossy, evenly dark and has no white streaks. Scrape down the sides and blend again for a few seconds.
Taste and blend in up to 1 tbsp more maple syrup if you want it sweeter. The mixture will be the texture of thick pudding at this point.
Divide between 4 small glasses or ramekins, cover, and refrigerate until set, at least 2 hours. It is ready when the surface looks matte and a spoon leaves a clean scoop; it firms up further overnight.
Just before serving, top each mousse with pomegranate seeds and a small pinch of flaky sea salt.
Storage: Keep covered in the fridge for up to 4 days. The mousse firms up as it sits, so let it stand at room temperature for 10 minutes before serving if you prefer it softer. Add the pomegranate and salt just before eating. Freezing is not recommended, as the tofu turns icy and weeps when thawed.
