Method

  1. Heat 2 tbsp olive oil in a large deep skillet or Dutch oven over medium heat. Add the onion, carrots and celery with a pinch of salt and cook, stirring now and then, until the onion is soft and translucent, 7–8 minutes.

  2. Turn the heat up to medium-high and add the mushrooms. Cook, stirring often, until they release their liquid, it evaporates, and the mushrooms start to brown, 7–9 minutes.

  3. Stir in the minced garlic, tomato paste and thyme. Cook for 1–2 minutes, stirring constantly, until the paste darkens to a brick red and coats the vegetables.

  4. Add the rinsed lentils, broth and soy sauce and bring to a boil. Reduce to a steady simmer, partly cover, and cook for 30–35 minutes, stirring occasionally, until the lentils are tender but still hold their shape and the sauce is thick and glossy.
