Savory Cottage Cheese Bowl with Crispy Smoked Paprika Chickpeas, Cucumber, Tomatoes and Avocado is a vegetarian lunch recipe made with canned chickpeas (one 15-oz can), olive oil, smoked paprika. It takes 24 minutes of hands-on time, serves 2, and each serving has 635 calories, 38 g of protein and 16 g of fiber.
Cottage cheese takes well to savory toppings when there is enough crunch and acid to balance its creaminess. Here the chickpeas are dried thoroughly and crisped in a hot skillet, then seasoned off the heat so the smoked paprika blooms in the oil without scorching. Lemon-dressed cucumber and tomatoes keep things fresh, and a quick sesame-garlic sprinkle gives an everything-bagel-style finish. The chickpeas and sesame seeds add protein on top of what the cottage cheese already brings.

- 1 tbsp15 gfresh lemon juice
- 1 tsp4.5 golive oil

Tips
- Don't crowd the pan: the chickpeas need to sit in one layer with a little space, or they steam instead of crisping.
- Add the smoked paprika only after the pan is off the heat. It turns bitter quickly over direct high heat.
- If your cottage cheese is very loose, pour off the liquid on top before scooping so the bowl doesn't turn watery.
- Taste before adding more salt at the table; cottage cheese varies a lot in saltiness between brands.
Swap ideas
- Use cannellini beans in place of chickpeas
- They brown well but stay creamier inside and are more fragile, so stir gently and expect less crunch.
- Swap dill for chopped parsley or sliced green onion
- Parsley tastes greener and milder; green onion adds a sharper, more bagel-shop edge.
- Replace half of the cottage cheese with Greek yogurt
- Gives a smoother, tangier base with a looser texture.
- Use lime juice and regular chili powder instead of lemon juice and smoked paprika
- Shifts the bowl in a brighter, taco-style direction with less smokiness.

Method
Drain and rinse the chickpeas, then spread them on a clean kitchen towel and roll and blot until the surfaces look matte and feel dry. Pick off any skins that come loose. The drier they are, the less they spatter and the faster they crisp.
Put the sesame seeds in a dry 10- to 12-inch skillet over medium heat and toast, shaking the pan often, until fragrant and a shade darker, 2 to 3 minutes. Tip them into a small dish and stir in the sprinkle's garlic powder, flaky salt and black pepper.
Return the skillet to medium-high heat and add 1 tablespoon olive oil. When it shimmers, add the chickpeas in a single layer. Cook, shaking the pan every minute or so, until they are deep golden, blistered in spots and rattle against the pan, 8 to 10 minutes. Lower the heat slightly if they pop aggressively.
Take the pan off the heat and immediately sprinkle in the smoked paprika, 1/4 teaspoon garlic powder and 1/4 teaspoon salt. Toss for about 30 seconds so the spices bloom in the residual heat and coat the chickpeas, then leave them in the pan, uncovered, while you build the bowls; they firm up further as they cool.
In a small bowl, toss the cucumber and tomatoes with the lemon juice, 1 teaspoon olive oil, a pinch of salt and half of the dill.
Divide the cottage cheese between two shallow bowls and spread it across the bottom. Spoon the cucumber and tomatoes over one side, leaving most of their juices behind, and arrange the avocado alongside.
Pile the chickpeas on top, scatter over the sesame sprinkle and the remaining dill, and finish with red pepper flakes if you like. Eat right away while the chickpeas are still crisp.
Storage: Best assembled and eaten right away. To get ahead, keep the cottage cheese and the undressed chopped cucumber and tomatoes in separate airtight containers in the fridge for up to 2 days, and store cooled chickpeas in a loosely covered container at room temperature for up to 1 day; they soften over time, so re-crisp them in a dry skillet over medium heat for 2 to 3 minutes. Cut the avocado and dress the vegetables just before serving.
