  1. Heat the oven to 425°F (220°C) with racks in the upper and lower thirds. Line 2 rimmed baking sheets with parchment.

  2. Toss the tofu cubes with the soy sauce and 1 tbsp olive oil. Sprinkle the nutritional yeast and cornstarch over them and toss again until every cube is lightly coated. Spread the cubes on one sheet with space between them.

  3. Roll the chickpeas in a towel to dry them well and throw away any loose skins. Toss with 2 tsp olive oil and the smoked paprika, then spread them in a single layer on one half of the second sheet. Hold the salt until after roasting because it draws out moisture and softens them.

  4. Roast both sheets for 15 minutes. Flip the tofu and shake the chickpeas, then swap the sheets between racks.

Salt the chickpeas while they are hot and let everything cool on the sheets for 5 minutes to crisp further.

  6. While everything roasts, blend the silken tofu, nutritional yeast, lemon juice, extra-virgin olive oil, Dijon, capers and brine, miso, garlic and pepper until completely smooth. Add cold water 1 tbsp at a time until the dressing is thick but pourable. Taste and add more lemon or salt if needed.

  7. Put the sliced kale in a large bowl with a pinch of salt and about 1/3 of the dressing. Massage with your hands for 1–2 minutes, until the leaves darken, soften and shrink by about a third.

  8. Add the remaining dressing and toss. Top with the baked tofu, crispy chickpeas, croutons and hemp hearts if using. Serve right away with lemon wedges.
