Method

  1. Rinse the sabudana in a bowl of water, swishing and draining 3–4 times until the water runs only slightly cloudy. Add the soaking water so it sits just level with the pearls, not above them. Cover and soak for 5–6 hours or overnight. To check, press a pearl between your fingers: it should squash easily, with no hard center.

  2. Tip the soaked sabudana into a colander and let it drain for 10 minutes, then loosen the pearls with a fork. In the meantime, dry-roast the peanuts in a wide skillet over medium heat, stirring often, until they smell fragrant and the skins blister, 5–6 minutes. Let them cool, rub off most of the skins, then pulse them to a coarse crumb. Stop before it turns into a paste.

  3. In a large bowl, toss the sabudana with the crushed peanuts, the salt and the coconut sugar (if using) until every pearl is coated.

  4. Heat the oil in a wide nonstick skillet over medium heat. Add the cumin seeds and let them sizzle until they darken a shade, about 30 seconds. Add the jalapeños and curry leaves and stir for 30 seconds more. Stand back, because the leaves will spatter.

  5. Add the potato cubes and a pinch of salt and stir to coat. Cover and cook over medium-low heat, stirring every 2 minutes, until the potatoes are tender when pierced and golden in spots, 8–10 minutes.

  7. Take the pan off the heat. Squeeze in the lime juice, fold in the cilantro, and taste for salt. Serve hot, topped with shredded coconut and lime wedges if you like.
