Method

  1. Sort through the makhana and throw out any dark, shriveled or hard pieces. If some are very large, break them in half so everything roasts evenly.

  2. Heat 1 tbsp ghee in a large heavy-bottomed skillet over medium-low heat. Add the peanuts and stir often until the skins darken and the nuts smell toasty, 3–4 minutes.

  3. Add the curry leaves and step back because they will splutter. Stir until they turn darker green and crisp, about 30 seconds. Lift the peanuts and leaves out with a slotted spoon and set them on a plate. Leave the ghee in the pan.

  7. Return the peanuts and curry leaves to the pan and toss everything together. Taste and add more salt or pepper if needed.

  8. Spread the mixture on a plate or tray and let it cool completely, about 10 minutes, before serving or storing. It gets crunchier as it cools.
