Air Fryer Tandoori Cauliflower Bites with Cucumber Mint Raita is a vegan snack recipe made with cauliflower, plain unsweetened coconut yogurt, chickpea flour (besan). It takes 31 minutes of hands-on time, plus 30 minutes resting, serves 4, and each serving has 141 calories, 5 g of protein and 5 g of fiber.

This version skips the batter. The florets get a thick spiced coconut yogurt marinade that clings and chars in the air fryer the way a tandoor would. A spoonful of chickpea flour thickens the marinade so it stays on the cauliflower, and smoked paprika stands in for the smokiness of a clay oven. Squeezing the grated cucumber dry keeps the raita thick enough to scoop instead of watery.

Tips

  • Use a thick plain unsweetened coconut yogurt. Vanilla or sweetened versions will make both the marinade and the raita taste off.
  • Keep the florets about the same size so they finish together. Halve any large ones through the stem.
  • The marinade has a lot of wet coating, so the florets won't come out crunchy like battered bites. Aim for tender centers and dark, slightly crisp edges.
  • Toast the raita cumin in a dry pan for 30 seconds until fragrant for a nuttier, smokier flavor.

Replace the smoked paprika with sweet paprika plus ¼ tsp amchur (dried mango powder)
Less smoky and more tangy, closer to a street-style tikka.
Add 1 tsp crushed dried fenugreek leaves (kasuri methi) to the marinade
Adds the slightly bitter, savory aroma typical of restaurant tandoori dishes.
Use cilantro instead of mint in the raita, or half of each
Gives a grassier, brighter dip that suits the charred spices.
Bake at 425°F (220°C) on a parchment-lined sheet for 25–30 minutes, turning once
Works without an air fryer and cooks a whole batch at once. The edges char a little less.

Sources: Cauliflower, raw, So Delicious Dairy Free Unsweetened Plain Coconutmilk Yogurt (manufacturer label; serving 3/4 cup = 170 g, converted to per 100 g), Chickpea flour (besan), Garlic, raw, Ginger root, raw, Lemon juice, raw, Oil, canola, ORGANIC GARAM MASALA (KHAZANA, SLT Foods Inc.; USDA Branded Foods, serving size 100 g), Spices, paprika, Spices, cumin seed, Spices, turmeric, ground, Spices, chili powder, Salt, table, Cucumber, with peel, raw, Spearmint, fresh

Method

  1. Rinse the cauliflower florets, then pat them very dry with a towel. Leftover water thins the marinade and keeps the florets from charring.

  2. In a large bowl, whisk the ½ cup coconut yogurt, chickpea flour, garlic, ginger, lemon juice, oil, garam masala, smoked paprika, cumin, turmeric, chili powder and salt into a thick paste. It should coat a spoon without running off; if your yogurt is thin, whisk in another teaspoon of chickpea flour.

  3. Add the cauliflower and toss until every floret is coated, working the paste into the crevices. Leave to marinate at room temperature for 30 minutes, or cover and refrigerate for up to 8 hours.

  4. While it marinates, make the raita. Grate the cucumber, squeeze it hard in your hands or a clean towel to remove the liquid, then stir it into the ¾ cup coconut yogurt with the mint, lemon juice, cumin and a pinch of salt. Taste, add more salt if needed, and chill until serving.

  5. Preheat the air fryer to 380°F (193°C) for 3 minutes. Lightly oil the basket, then arrange the florets in a single layer with a little space between them. Cook in two batches if your basket holds less than about 4 cups.

  6. Air fry for 8 minutes, then shake the basket or turn the florets with tongs.

  7. Air fry for another 6–8 minutes, until the edges are charred in spots and a knife slides easily into the thickest stem. For more char, finish with 1–2 minutes at 400°F.

  8. Pile the cauliflower onto a platter and scatter with cilantro and red onion, if using. Serve hot with the raita for dipping and lime wedges on the side.

Storage: Refrigerate the cauliflower and raita in separate airtight containers for up to 2 days. Reheat the cauliflower in the air fryer at 375°F for 3–4 minutes to bring back the edges. The raita loosens as the cucumber releases water, so stir it before serving.
