5-Minute Vegan Chocolate Peanut Butter Protein Mug Cake is a vegan dessert recipe made with rolled oats, chocolate or vanilla vegan protein powder (about 1 scoop), unsweetened cocoa powder. It takes 6 minutes of hands-on time, plus 1 minutes resting, serves 1, and each serving has 500 calories, 27 g of protein and 8 g of fiber.
Protein powder alone cooks into a dry, spongy puck, so this cake mixes it with blended oats for real crumb. Soy milk and a spoonful of peanut butter keep it moist. A second dollop of peanut butter goes into the middle and stays soft and saucy, and chopped dark chocolate melts into pockets. The key is pulling it from the microwave while the center still looks slightly glossy, because it finishes setting as it rests.
A protein boost + flavor profile (chocolate peanut butter with plant protein powder and soy milk for ~25g protein, instead of a pumpkin spice dessert with maple glaze) take on our 5-Minute Vegan Pumpkin Mug Cake with Maple Cinnamon Glaze.

Filling
Kit: microwave-safe mug (12 oz or larger), small blender or spice grinder, fork or small whisk
Tips
- Spoon the protein powder into the measuring cup and level it off rather than scooping it. Packed powder is the most common reason a protein mug cake comes out dry.
- Pea- and blended-plant protein powders absorb more liquid than soy-based ones. Judge the batter by how it looks, not just by the measurements.
- Use a mug at least twice as big as the batter, because the cake rises well above where it starts before settling.
Swap ideas
- Almond butter or sunflower seed butter instead of peanut butter
- Sunflower seed butter makes it nut-free with a slightly earthier taste. It can turn faintly green in baking, which is harmless.
- Mashed ripe banana (2 tbsp) instead of maple syrup
- Gives a moister, fudgier crumb with a banana flavor. It's less sweet, so taste your protein powder first.
- Oat milk or almond milk instead of soy milk
- Works the same way, but adds less protein than soy milk.
- Chocolate chips or chopped peanuts instead of chopped dark chocolate
- Chips hold their shape more than chopped chocolate, and peanuts add crunch.

Method
Blend the rolled oats in a small blender or spice grinder until they become a fine flour, 15–20 seconds.
Lightly grease a mug that holds at least 12 oz with the oil, or skip this if the mug is nonstick. Add the oat flour, protein powder, cocoa, baking powder and salt, and stir with a fork until no streaks of cocoa remain.
Add the soy milk, the batter peanut butter and the maple syrup. Mix well, scraping the bottom of the mug, until smooth and glossy. The batter should be as thick as pancake batter. Protein powders absorb liquid differently, so if yours is stiff, add soy milk 1 teaspoon at a time until it loosens.
Stir in most of the chopped chocolate. Push the remaining peanut butter into the center of the batter so it's just covered, then scatter the rest of the chocolate on top.
Microwave on high for 60 seconds in a 1000–1100W microwave, or about 75 seconds in a 700–800W one. The cake should rise, and the top should look set and spring back at the edges while the very center still looks a little moist. If the batter still looks wet and liquid, cook in 10-second bursts. Don't overcook it, or the protein powder will turn it rubbery.
Let the cake rest in the mug for 1 minute so the center finishes setting. Sprinkle with flaky salt if you like, and eat it warm with a spoon.
Storage: Best eaten warm right after cooking, because protein mug cakes firm up and dry out as they cool. To prep ahead, mix the dry ingredients in a jar and keep it at room temperature for up to 2 weeks. Then add the wet ingredients and microwave when you want one.
