5-Minute Apple Nachos with Warm Peanut Butter, Dark Chocolate and Hemp Hearts is a vegan snack recipe made with crisp apples (such as Honeycrisp or Pink Lady), lemon juice, cold water. It takes 6 minutes of hands-on time, serves 2, and each serving has 375 calories, 11 g of protein and 7 g of fiber.
Slicing the apples into thin rounds and giving them a quick lemon-water dip keeps them crisp and pale while you build the plate. A little maple syrup and warm water loosen the peanut butter so it pours in thin ribbons instead of sitting in heavy blobs. Finely chopped dark chocolate melts slightly on contact with the warm drizzle, while hemp hearts and pumpkin seeds add crunch and some plant protein.
Ingredients
Apples
- 2 medium364 gcrisp apples (such as Honeycrisp or Pink Lady), cored and thinly sliced
- 1 tbsp15 glemon juice
- 1 cup237 gcold water, for the lemon dip
Peanut butter drizzle
- 3 tbsp48 gnatural creamy peanut butter (vegan)
- 2 tsp13 gmaple syrup
- 1 tbsp15 gwarm water
- ¼ tsp0.7 gground cinnamon
- 1 pinch0.4 gfine salt
Toppings
- ½ oz14 gdairy-free dark chocolate (70% or higher), finely chopped
- 1½ tbsp15 ghemp hearts
- 1½ tbsp12 groasted pumpkin seeds (pepitas)
- 1 pinch0.3 gground cinnamon, for dusting (optional)
- 1 tbsp3.8 gunsweetened coconut flakes (optional)
Kit: cutting board, chef's knife or apple corer, medium bowl, small microwave-safe bowl, large serving plate
Tips
- Tart-sweet, firm apples like Honeycrisp, Pink Lady or Granny Smith stay crunchy under the warm drizzle; softer varieties like Red Delicious turn mealy.
- No microwave? Warm the peanut butter mixture in a small saucepan over low heat for about 1 minute, stirring constantly.
- Use natural peanut butter that's just peanuts and salt. Stir the jar well first so the oil is mixed back in.
- Check the chocolate label: many dark chocolates contain milk solids or butterfat, so choose one marked dairy-free.
Swap ideas
- Sunflower seed butter instead of peanut butter
- Makes it nut-free for school lunches. The flavor is earthier, and it may turn slightly green where it touches the lemon, which is harmless.
- Almond butter instead of peanut butter
- Milder and a little sweeter. It usually needs an extra teaspoon of water to drizzle.
- Pears instead of apples
- Softer and juicier. Use firm-ripe pears and serve right away.
- Cacao nibs instead of dark chocolate
- Less sweet, with more crunch and a deeper, more bitter chocolate flavor.

Method
Stir the lemon juice into the cold water in a medium bowl. Core the apples and slice them crosswise or into wedges about 1/4 inch thick, dropping the slices into the lemon water as you go.
Let the slices sit for 1–2 minutes, then drain and pat dry with a clean towel so the drizzle clings instead of sliding off. Fan them out, overlapping, on a large plate.
Combine the peanut butter, maple syrup, cinnamon and salt in a small microwave-safe bowl. Microwave for 15–20 seconds, until warm and softened.
Stir in the warm water a teaspoon at a time until the mixture falls from a spoon in a thin, steady ribbon. If it seizes or thickens, add a few more drops of water and keep stirring.
Drizzle the peanut butter sauce over the apples in a zigzag, rotating the plate so every slice gets some.
Right away, scatter the chopped dark chocolate over the warm drizzle so it softens slightly. Top with the hemp hearts, pumpkin seeds, and coconut and a pinch of cinnamon if using. Serve immediately.
Storage: Best eaten right after assembling, because the apples soften under the drizzle. To prep ahead, keep lemon-dipped apple slices in an airtight container in the fridge for up to 1 day. Store the drizzle and toppings separately, then rewarm the drizzle and assemble just before serving.
