Method

  1. Set a heavy-bottomed skillet over low heat and add the cashews. Toast them, stirring, until they are lightly golden and smell fragrant, 2–3 minutes. Tip them into a large bowl and set aside.

  2. Pour the 1/2 cup of melted coconut oil into the same skillet and add the sifted chickpea flour. At first it will look like damp sand. Stir with a spatula until there are no dry pockets left.

  3. Roast over low to medium-low heat, stirring and scraping the bottom constantly, for 18–22 minutes. It's done when the flour has turned an even golden tan, smells strongly nutty, and has loosened into a glossy, slightly runny paste. Don't rush this or turn up the heat. Underroasted besan tastes raw and gritty, and scorched besan tastes bitter.

  4. Scrape the roasted besan into the bowl with the cashews. Stir in the chopped pistachios, cardamom and salt. Let it cool, stirring now and then, until it feels warm but no longer hot when you touch it, 15–20 minutes.

  5. Sift in the powdered sugar and mix well with your hands or a spatula until the mixture is even and holds together when you squeeze it. If it crumbles, add the extra melted coconut oil 1 tablespoon at a time.

  6. Shape the ladoos while the mixture is still slightly warm. Take about 2 tablespoons at a time, squeeze it firmly in your palm, then roll it into a smooth ball. If you like, press a few slivered pistachios on top.
