Method
Put the pitted dates in a heatproof bowl, pour the hot water over them and soak until very soft and squishy, about 10 minutes. If your dates are dry and firm, give them 20 minutes.
Drain the dates and keep the soaking water. Blend the dates with the peanut butter, vanilla, salt and 3 tablespoons of the soaking water in a food processor or small blender. Scrape down the sides often and stop once it's smooth and thick, like a spreadable caramel, 2–3 minutes. Add more soaking water 1 teaspoon at a time only if it won't blend.
Cut each apple crosswise into rounds about 1/2 inch thick, 5–6 per apple, and skip the very top and bottom ends. Punch out the core with a small round cutter, piping tip or paring knife. If you're using lemon juice, stir it into 1 cup of cold water and dip the rounds briefly.
Lay the apple rounds on a towel and pat both sides completely dry, then arrange them on a parchment-lined tray. Any moisture left on the surface will make the caramel slide off.
Spread about 1 heaping tablespoon of date caramel over the top of each round, leaving a thin border at the edge.
Melt the chocolate with the coconut oil in a microwave-safe bowl in 20–30 second bursts, stirring after each, until smooth and glossy, 1–2 minutes total. You can also melt it in a bowl set over barely simmering water.
Drizzle the chocolate over the caramel with a spoon, then right away scatter on the crushed peanuts and a pinch of flaky salt, if using, so they set into the chocolate.
Refrigerate the tray until the chocolate is firm, 15 minutes, or freeze it for 8–10 minutes. Cut each round in half or quarters to make bites, and serve cold.
Storage: These are best eaten the day you make them. Once assembled, keep them covered in the fridge for up to 24 hours, after which the apples start to weep and soften. The date caramel keeps on its own in an airtight jar in the fridge for up to 1 week, so you can slice and top fresh apples whenever you want.
