Freezer-Friendly Vegan Breakfast Sandwiches with Baked Tofu Egg Patties and Spinach is a vegan breakfast recipe made with firm tofu, chickpea flour, unsweetened soy milk. It takes 40 minutes of hands-on time, plus 10 minutes resting, serves 6, and each serving has 406 calories, 21 g of protein and 7 g of fiber.
Instead of frying patties one by one, the tofu egg here is blended into a pourable batter, baked as a single slab and cut into six pieces, so a week of sandwiches takes one pan. Chickpea flour sets the tofu so the patties hold together through freezing and reheating, and kala namak gives the eggy, sulfurous note. Spinach is baked right into the patty, which keeps it from making the muffins soggy. Freeze just the muffin and patty, then add avocado, tomato and the spicy mayo after reheating.

To serve
- ¼ cup56 gvegan mayonnaise
- 2 tsp10 ghot sauce, or to taste
- 1 large195 gripe avocado, sliced, add fresh, not before freezing
- 1 large160 gtomato, cut into 6 slices, add fresh, not before freezing
Kit: blender or food processor, 9x13-inch baking pan, parchment paper
Tips
- Pat the tofu dry but don't bother pressing it. The batter needs some moisture to blend smooth, and the chickpea flour does the setting.
- Don't underbake. Chickpea flour tastes bitter and beany when raw, so wait until the center is firm and dry.
- The aroma of kala namak fades with heat. For a stronger eggy flavor, dust a small pinch over each patty just before serving.
- Toast the muffins only lightly if you plan to freeze them. They dry out further when reheated.
- For a crisper sandwich from the freezer, microwave the patty on its own and toast the frozen muffin halves in a toaster.
Swap ideas
- Use finely chopped kale (stems removed) instead of spinach
- Slightly chewier and earthier. Chop it very fine so the patties still cut cleanly.
- Use regular salt instead of kala namak (about 1/2 tsp extra)
- Still savory, but without the eggy, sulfurous flavor.
- Use bagel thins or burger buns instead of English muffins
- A softer, larger sandwich. The untrimmed square patties fit burger buns well.
- Use salsa instead of the spicy mayo
- A lighter, tangier sandwich with less richness.

Method
Heat the oven to 400°F (200°C). Line a 9x13-inch baking pan with parchment, leaving some overhang on the long sides, and brush the parchment lightly with olive oil.
Break the tofu into a blender or food processor and add the chickpea flour, soy milk, nutritional yeast, olive oil, kala namak, garlic powder, baking powder, turmeric, salt and pepper. Blend until completely smooth, scraping down the sides once or twice, 1–2 minutes. The batter should be thick but pourable, like pancake batter.
Stir the chopped spinach into the batter by hand (or pulse 2–3 times, just to mix it through without turning the batter green). Scrape into the lined pan and spread into an even layer all the way to the corners.
Bake on the middle rack until the slab is set and dry to the touch in the center, lightly puffed, and golden at the edges, 22–25 minutes. A knife inserted in the middle should come out clean, with no wet batter.
Let the slab cool in the pan for 10 minutes so it firms up. Meanwhile, toast the English muffins until lightly golden, and stir the vegan mayonnaise and hot sauce together in a small bowl.
Lift the slab out by the parchment and cut it into 6 equal patties (one cut lengthwise, two crosswise). Trim the corners if you want them to fit the muffins neatly, or cut rounds with a 3 1/2-inch cutter and tuck the scraps in.
To eat now: spread the muffins with the spicy mayo, then add a warm patty, a slice of tomato and a few slices of avocado. Close and serve.
To freeze: let the patties and muffins cool completely, then sandwich each patty in a muffin with no sauce or fresh toppings. Wrap each one tightly in parchment or foil and store in a freezer bag. Reheat unwrapped and rolled in a paper towel in the microwave for 1 1/2–2 minutes from frozen, turning halfway, or wrapped in foil in a 350°F (175°C) oven for 20–25 minutes, until steaming hot in the center. Open and add the mayo, tomato and avocado.
Storage: Refrigerate patties or assembled muffin-and-patty sandwiches (no sauce, avocado or tomato) in an airtight container for up to 4 days. To freeze, wrap them individually and keep in a freezer bag for up to 3 months. Reheat from frozen in the microwave for 1 1/2–2 minutes, or wrapped in foil at 350°F for 20–25 minutes. Add fresh toppings after reheating.
