Tips
- Pat the tofu really dry before grating. The less water it holds, the faster it bakes into dry, salty crumbles.
- Don't crowd the eggplant. One layer in shimmering oil browns it; a packed pan steams it and turns it greasy.

Method
Heat the oven to 400°F and line a baking sheet with parchment. Bring a large pot of well-salted water to a boil. Grate the tofu on the large holes of a box grater and toss it with the nutritional yeast, lemon juice, 1 tbsp olive oil and 3/4 tsp salt. Spread it thinly on the sheet and bake for 15–18 minutes, stirring halfway, until dry, crumbly and golden at the edges.
While the tofu bakes, heat 3 tbsp olive oil in a large skillet over medium-high heat until it shimmers. Add half the eggplant in a single layer and fry, turning every couple of minutes, until deep golden on most sides and creamy inside, 6–8 minutes. Move it to a plate, season with a pinch of salt, and repeat with the remaining 3 tbsp oil and eggplant.
Lower the heat to medium. Add 2 tbsp olive oil, the garlic and the red pepper flakes to the empty skillet and cook, stirring, until the garlic is fragrant and just turning pale gold, about 1 minute.
Pour in the crushed tomatoes and their juices, add the remaining salt and a few basil leaves, and simmer briskly, stirring now and then, until the sauce thickens and turns a deeper red, 12–15 minutes.
While the sauce simmers, cook the pasta until 1 minute short of al dente. Scoop out 1 cup of the cooking water, then drain.
Add the pasta and about two-thirds of the eggplant to the sauce with a splash of the pasta water. Toss over medium heat for 1–2 minutes, until the sauce coats the pasta and looks glossy. Add more water if it seems tight. Taste and adjust the salt.
Divide among bowls. Top each with the remaining crispy eggplant, torn basil and a generous handful of tofu ricotta salata, then finish with a drizzle of olive oil if you like.
Storage: Refrigerate the sauced pasta in an airtight container for up to 3 days. The eggplant softens but still tastes great. Reheat in a skillet with a splash of water. Keep the tofu ricotta salata separate in a sealed container for up to 5 days so it stays crumbly.
